The coffee on my station is Unapologetic — Kaapi Royale's washed Robusta, roasted by Kanav at Exst Coffee Lab. I chose it because it carries the one thing the species line says Robusta shouldn't: a clean, citric acidity that sits unusually high in the cup. Sweet without sugar. I selected this lot at origin during a December 2025 origin trip that Arpan and Nishant Gurjer curated for a small group of Indian home brewers. Kanav and I roasted six profiles on the Roest and narrowed them to one with an SCA sensory panel and a parallel panel of home baristas. The cup on the table on June 21 is the one that survived both.
